I run a network of PC's and I wish to run SETI on all of them; is there an easy way to store WU's for them & keep track of their progress?

Yes there is, though you still need to install SETI clients on each (SETIDriver or SETIHide makes it easier). There is a program called SETIQ which has the ability to store WU's, keep a history of individual machines progress & provide a web interface for it for remote viewing. SETIQ acts as a proxy for SETI & thus gives you a single point to fetch & flush WU's.
